Mexican Rice recipe Epicurious. This is one of my favorite side dishes for anything mexican. I love serving it with fish tacos. It is so full of flavor and great hot or room temperature. I add the garlic about a minute before the liquid which I also reduce so the rice isnt too wet. I dont know whether that is a fact, though this is one taste test that I think I need to experience  Most crawfish feed on grass and come from the swamps of the Atchafalaya, but the crawfish from Crowley feed on the rice in the fields, which is apparently what gives them this unique taste.
