I usually cook it as directed then cool it before dishing it into smaller containers for the freezer. Then its simply a thaw, reheat and eat kind of meal. That said, I would give the bake from rawfrozen or rawfrozen then thawed approach a test run before you attempt to serve it to company. The vegetables may contribute a significant amount of liquid to the dish and make it soggy then again, it may be just fine. I cant say from my own experience how it will turn out though. Sorry, thats probably not the answer you were hoping for however, if you do give it a try, wed love to hear how it works out. And if youre making this for company, Id suggest doubling it and putting it in a larger pan. You can cut the vegetables and meat ahead of time, storing them separately in the fridge until its time to toss them together in the pan with the oil, spices, nuts, raisins, etc.
